The best of both worlds...
Jeff & I have a charcoal grill and for a while he has wanted a gas grill for days when he wants to cook something quicker. So, we found a good deal on a big grill, so we bought it. Now we can enjoy food cooked quicker on the gas grill, or days when we have time and want better flavor we can enjoy food cooked on the charcoal grill.

We decided we needed a new runner for when you enter the house....the other one was falling apart!!! It's a green color. I took one picture without the flash, and one with the flash :)

Corny Chicken Wraps
So, I'm on a mission this summer to try some new recipes. I found this one in the 2005 Taste of Home Annual Recipes book! We tried it tonight and it was pretty tasty!
1 pound boneless skinless chicken breasts, cut into strips
1/2 C. chopped green pepper
1/4 C. chopped green onions
2 teaspoons canola or vegetable oil
1- 1/2 C. frozen whole kernel corn, thawed
1-1/2 C. salsa
1/4 C. sliced ripe olives
1/2 teaspoon chili powder
6 flour tortillas (8 inches), warrmed
1 cup shredded reduced-fat cheddar cheese
In a nonstick skillet, saute the chicken, green pepper and onions in oil for 3-4 minutes or until chicken juices run clear; drain. Stir in the corn, salsa, olives, and chili powder. Cook and stir over medium heat for 3-4 minutes or until heated through. Spoon about 1/2 C. chicken mixture over one side of each tortilla. Sprinkle with cheese; roll up and secure with toothpicks.
Yield: 6 servings
Nutritional Analysis: One filled tortilla equals 368 calories, 11 g fat (4 g saturated fat), 58 mg cholesterol, 632 mg sodium, 40 g carbohydrate, 3 g fiber, 29 g protein
Diabetic Exchanges: 3 lean meat, 2-1/2 starch

Space Shuttle Launch

We've had a good time in Florida this week. Jennifer's flight left at 8ish this morning, so we've been hanging out at the airport since about 7ish. It's now 10:30 ET and we're still hanging out. We're doing some people watching, surfing the internet, etc.....only a couple more hours until we get to board our plane and go home. Hopefully, I'll have time this next week to upload some pictures of our trip!

Blue Foot
So, our basement had some water in it the other day...so I put on some old flip flops to get explore! Well, I felt that my foot was sticky, but thought I'd stepped on tape or a sticker or something. Well, I was wrong....somehow, my flip flop melted to my foot. Yes, if you look carefully you can see some blue stuff on the heel of my foot -- that is BLUE flip flop! They're old flip flops that are deteriorating, and apparently meshed with my foot. I scrubbed and scrubbed, but there's still a bit of blue left....hopefully it wears off before too long!

Our Latest Purchase
So, we went to Sears tonight to look for a table for camping -- and found one that was a good deal. Then we headed to Lowe's to look at some stuff and found that a refrigerator we'd been looking at was on sale ... so we came home with a new refrigerator tonight :)

Water Meter Leak
Well we noticed a couple weeks ago ( April 30) that our water meter was full of water and leaking. So, we called the water department and they sent someone out to check it. He came out on Sunday afternoon, and said it was a gasket and would come out and fix it on Monday. No one came all week, so I called on Friday (May 4). On Monday (May 7) we get a call from the water department that it is not their work order, and that I should have called the street department to come fix my WATER meter! Yes, confused us too. So, I called the street department and the guy there was confused and said someone should be out to fix it this week. Well, it hasn't happened yet. But, I thought I would go ahead and document the story of the leaking water meter that the STREET department has to fix!? Confused yet, I am!
